Another Weekend Meal Prep

A lot of people have expressed interest in our food lately, so this post is a snapshot of a typical weekend meal prep in our household. To make weeknights easier, I prepare all our lunches and dinners on the weekend so we only need to heat food up during the week. For two people that’s generally twenty portions of food, which can sound a little daunting, but isn’t that bad once you get used to it. Here’s exactly what that looks like for us.

Side note: we’re 100% vegan, but I’m not going to write vegan X, vegan Y, etc constantly, so if I say “Cheese” or “Sausage” or whatever, I’m referring to the vegan version. Also, I’m limiting this post to meals cooked, excluding any baking for simplicity. Continue reading
